That's one way to encourage others to eat their greens. In celebration of Earth Day, performance artist Alison Knowles is performing a salad-making piece at the Chelsea Market Passage on the High Line. The Make a Salad performance art was first performed in 1962. Since then, Knowles has brought it around the world.

Sounds easy enough, but as this 2008 clip shot at the Tate Gallery in London shows, it takes an absurd amount of salad ingredients just to accomplish this feat. However, the audience is eventually rewarded a taste of the finished product, thus becoming part of the performance:
